Recipe:
Shrimp Orzo Pasta Salad
Ingredients
• 1 lb shrimp
• 1 tsp olive oil
• 8 oz orzo pasta
• 2 mini cucumbers, diced
• 1 ¾ cups cherry tomato, halved
• 1/3 cup purple onion chopped
• ¾ cup feta cheese, crumbled
• ¼ cup fresh parsley, finely chopped
• ¼ cup fresh dill, finely chopped
For the Dressing
• 1/3 cup extra virgin olive oil
• ¼ cup red wine vinegar
• 1 tbsp fresh lemon juice
• ¼ tsp salt
• ¼ tsp black pepper
Instructions
1. Heat a skillet over medium-high heat, add 1 tbsp olive oil. Once hot, add cooked shrimp pinch salt and pepper and cook for 3-5 min. Chop the shrimp I half and let cool. (If using raw shrimp cook until shrimp turns opaque).
2. Cook 8 oz orzo pasta according to package instructions, then drain and let cool. Add pasta to a large bowl with the cucumbers, tomatoes, onions, feta cheese, parsley, dill, and cooked shrimp.
3. Combine dressing ingredients in a small bowl, and whisk till combined. Pour dressing over pasta salad and gently toss to combine. Serve and enjoy!
