Ingredients:
0.8 lb Beef Tenderloin or Eye Round
Salt for marinate (1/4 tsp)
Corn starch for marinate (1 tbsp)
Shaoxing wine (1 tbsp)
Sliced ginger
sliced scallion
1 egg white
Veggies and aromatics
1 handful beansprouts
1 baby napa cabbage
1/4 tsp salt
Knife edge chilies:
1 handful dry chili
2 tsp Sichuan peppercorn
Boiled Beef Soup:
1 piece Chopped ginger
3 cloves garlic chopped
1 tbsp cooking oil
1.5 tbsp Sichuan chili bean paste (Doubanjiang)
1 tsp chili powder
1.5 cup stock (or water)
5 tbsp Cooking oil
Garnish
green onion
cilantro

I honestly was scared of this dish at first. Looking at it in the restaurant it is very intimidating for someone who normally does not like spicy food…. BOY was I wrong. This dish is extremely flavorful and in some ways a little floral tasting. Yes a little spicy but not what I expected. Extremely extremely aromatic and flavorful. It's honestly almost addicting to have. At my local Sichuan restaurant here in Surrey, BC…The place is called 味道重庆Don Asian Kitchen… They did this dish Justice… so much so that whenever I have this dish anywhere else… They set the bar for me. There is one thing I like when I have this dish and it will sound weird but I like cilantro added to this and lots of it. I find it goes well with some rice on the side.
If you have never tried Sichuan style food.. This dish is A MUST try. Even if you cannot handle spicy food. Even my 6 year old son enjoys this now and always requests it whenever we are out.
What kind of dry chilies do you use… I have Thai dry chilies, do I need special Sichuan chilies?
