Pane Nero di Castelvetrano is one of the most beautiful breads in Sicily, dark, nutty, with a flavour that is both rustic and sweet. Franco at the Cacioppo bakery in Castelvetrano kindly gave me this Tumminia flour, and I made it here at home in England using only my hands. No mixers, no machines, just flour, water, yeast, and patience. If you want to try this bread yourself, the best way is to search online for “Tumminia flour Pane Nero Castelvetrano”. There are a number of Italian suppliers who can ship internationally. If you cannot find it, you can use wholemeal/wholewheat bread flour as a substitute – it will not be exactly the same, but it will still be very close and delicious.

Inspirational again! If you like olive oil with salt and pepper on bread then you might equally like just olive oil and salt (or sugar for the kids – I've definitely had more than enough of that when I was a kid). Quite irresistible with freshly baked village bread. Another variation which I learnt of only just recently is olive oil with salt and lemon juice.

Good morning, such beautiful breads. I feel the secret here is in the flour, for sure. The colour and the texture of the bread looks amazing. Non-Italian people refer to certain foods as peasant food, but you know what, that is the best and most healthy food on the planet. It is great tasting and so nutritious, I am well pleased that some are so ignorant that just leaves the good foods for us. A slice with the beef is all you need to satisfy a hungry stomach.
