Apple Mini Pies with Puff Pastry
Ingredients:
• 2-3 large apples (Granny Smith or Honeycrisp work great)
• 2 tbsp unsalted butter
• 3 tbsp sugar (adjust to taste)
• 1 tsp ground cinnamon
• 1 package puff pastry (about 17 oz, thawed if frozen)
• 1 egg (for egg wash)
• Brown sugar for sprinkling
Instructions:
1. Prepare the filling:
Peel, core, and dice the apples into small cubes. In a medium-sized skillet, melt the butter over medium heat. Add the diced apples, sugar, and cinnamon, stirring to coat the apples evenly. Cook for about 5-7 minutes until the apples are tender and the mixture has thickened slightly. Remove from heat and let the filling cool.
2. Prepare the dough:
Preheat your oven to 350°F (175°C). On a lightly floured surface, roll out the puff pastry to about 1/8-inch thickness. Cut the pastry into equal rectangles, approximately 4×6 inches in size. For even cuts, you can use a ruler or a pizza cutter.
3. Assemble the pies:
Place a tablespoon of the cooled apple filling onto one half of each rectangle, leaving a small border around the edges. On the other half, use a knife to make a small cross-shaped cut to allow steam to escape during baking. Carefully fold the pastry over the filling, aligning the edges. Use a fork to crimp and seal the edges securely.
4. Prepare for baking:
In a small bowl, beat the egg and brush it over the tops of each mini pie. Sprinkle the tops with brown sugar for a little extra sweetness and a nice crunch.
