Ingredients
500g chicken thighs
1 thumb-sized piece of ginger
2 spring onions
5-6 tbsp dark soy sauce
2 tbsp palm sugar
3-4 tbsp Shaoxing rice wine
1.5-2 tbsp light soy sauce
1 cup chicken stock
1-2 tbsp oil for frying
