What people don’t understand is that blending and cooking food does reduce the nutrients and makes it easier to digest, so you won’t get as much fiber. Just start eating vegetables guys.
Tomato is a fruit tho.
Tip: de-clove the garlic before cooking. Makes everything easier and you get more garlic. It's not even satisfying to squeeze out, just looks poopy

I've done something similar. Unfortunately the cherry tomatoes even though they are naturally sweet, turned sower in the sauce and the taste was just odd. Looks nice indeed but don't expect to taste like some kinda fancy sauce at least according to my experience.

Caution- I would squeeze the roasted garlic cloves out of the skin and throw the skin away. Including the whole head of garlic is probably not a great idea. You didn’t mention seasoning but for me I’d definitely add Italian seasoning, some tomato paste and grated Parmesan for flavor. I like your recipe- I’m always looking for new and easy ways to eat more fruits and veggies!
I do this with my paneer makhni… It really is effective and no one knows which vegetables are in there.. 😏😏😏

I gotta ask, is eating blended vegetables healthier than eating it whole?
I was told it makes it easier to digest and helps your body lose weight better because it's a liquid.
I also heard that solid vegetables give your body more to absorb the nutrients and give you energy.
