Homemade bread from dough to a beautiful loaf! #shorts
Get ready to be amazed by the baking process and the delicious end result.
450 grams AP flour
50 grams whole wheat flour
390 grams warm= water
10 grams salt
3 grams instant yeast
90 grams levain
Mix water and levain in a bowl, add the flours and mix until incorporated.
Sprinkle salt and yeast on top and let rest, covered, for about 20 minutes.
Pince the dough until mixed (squeezing like a lobster would), this takes about 5 minutes.
Shape into a ball and cover.
Do 3 folds over the next 3 hours. The first 2 should preferably be within the first hour.
Make sure the dough is covered when the folding is done.
After the rise, shape into a loaf on a lightly floured counter.
Put in a bread pan and cover for an hour.
Rest overnight in the fridge, covered (I use a grocery store fruit/veggie plastic bag and I lightly wet down the dough so it doesn’t stick to the bag).
Bake the next day at 425F for 20 mins in a dutch oven with the lid on, then another 25 minutes with the lid off.
