* ½ cup sour cream (optional, for creaminess)
* Salt & pepper, to taste
Sloppy Joe Layer:

* ½ cup onion, finely diced
* ½ cup green bell pepper, diced
* 2 garlic cloves, minced
* 1 cup ketchup
* 2 tbsp brown sugar
* 1 tbsp Worcestershire sauce
* 1 tbsp yellow mustard
* ½ tsp smoked paprika
* ½ tsp chili powder (optional for heat)
* Salt & pepper, to taste
Cheese Topping:
* 1 cup shredded cheddar cheese
* ½ cup mozzarella (optional, for extra melt)
* parsley or green onions, for garnish
Instructions
1. Make Mashed Potatoes:
* Boil cubed potatoes in salted water until fork-tender (12–15 min).
* Drain, then mash with butter, milk, sour cream, salt & pepper until smooth. Set aside.
2.* In a large skillet, cook ground beef over medium heat until browned.
* Drain the grease, then add onion, garlic, and bell pepper. Sauté 3–4 minutes until soft.
* Stir in ketchup, brown sugar, Worcestershire, mustard, paprika, chili powder, salt & pepper.
* Simmer 5 minutes until thickened.
3. * Preheat oven to 375°F (190°C).
* In a greased 9×13 baking dish, spoon sloppy joe mixture evenly.
* Top with mashed potatoes, smoothing out.
* Sprinkle shredded cheddar (and mozzarella if using) over the top.
4.* Bake uncovered for 25–30 minutes until cheese is melted and lightly golden.
* For extra color, broil for 1–2 minutes at the end.
5. * Garnish with parsley or green onions.
* Serve hot, just like a cheesy, sloppy joe-style shepherd’s pie.

Which Ketchup you use, depends on the sweetness. Heinz has more vinegar in their ketchup, and Hunts has less, so it's sweeter.

That looks delicious…so glad to see you use a spatula instead of a spoon to clean out the bowls…the cooks that use a spoon leave so much behind
Looks delicious! 😊
Wow..looks fabulous
Looks awesome, kinda like an American style Shepard's pie!
I've got a little grater just like that but it's only as big as half your thumb. I think I got it from pampered chef.
Tammy you are making me hungry
For a single person you could split the meat mixture in two parts use 1/2 for your sloppy Joe's and 1/2 you could make taco meat out of it. Or 3rd it and 1 potato sloppy Joe's, reg sloppy Joe's, and taco meat. Kind of mix it up.
