Sloppy Joe Potato Casserole Will Blow Your Mind!

Sloppy Joe Mashed Potato Casserole
Ingredients
Mashed Potatoes:
* 4–5 large russet potatoes, peeled & cubed
* 4 tbsp butter
* ½ cup milk (heavy, whole, or preferred)
* ½ cup sour cream (optional, for creaminess)
* Salt & pepper, to taste
Sloppy Joe Layer:
* 1 lb ground beef (or ground turkey)
* ½ cup onion, finely diced
* ½ cup green bell pepper, diced
* 2 garlic cloves, minced
* 1 cup ketchup
* 2 tbsp brown sugar
* 1 tbsp Worcestershire sauce
* 1 tbsp yellow mustard
* ½ tsp smoked paprika
* ½ tsp chili powder (optional for heat)
* Salt & pepper, to taste
Cheese Topping:
* 1 cup shredded cheddar cheese
* ½ cup mozzarella (optional, for extra melt)
* parsley or green onions, for garnish

Instructions
1. Make Mashed Potatoes:
* Boil cubed potatoes in salted water until fork-tender (12–15 min).
* Drain, then mash with butter, milk, sour cream, salt & pepper until smooth. Set aside.
2.* In a large skillet, cook ground beef over medium heat until browned.
* Drain the grease, then add onion, garlic, and bell pepper. Sauté 3–4 minutes until soft.
* Stir in ketchup, brown sugar, Worcestershire, mustard, paprika, chili powder, salt & pepper.
* Simmer 5 minutes until thickened.
3. * Preheat oven to 375°F (190°C).
* In a greased 9×13 baking dish, spoon sloppy joe mixture evenly.
* Top with mashed potatoes, smoothing out.
* Sprinkle shredded cheddar (and mozzarella if using) over the top.
4.* Bake uncovered for 25–30 minutes until cheese is melted and lightly golden.
* For extra color, broil for 1–2 minutes at the end.
5. * Garnish with parsley or green onions.
* Serve hot, just like a cheesy, sloppy joe-style shepherd’s pie.

  1. For a single person you could split the meat mixture in two parts use 1/2 for your sloppy Joe's and 1/2 you could make taco meat out of it. Or 3rd it and 1 potato sloppy Joe's, reg sloppy Joe's, and taco meat. Kind of mix it up.
