That Chicharrón👌🏻

Pork Leg Marinade for Perfect Chicharrón

✨ Quick Recipe Breakdown 👇🏻

Marinade
Add 1 red onion, 30g green olives, 2 tbsp dried Dominican oregano, 10 cloves garlic, juice of 3 limes, 2 tbsp salt and 1 tsp black pepper to a food processor
Blitz until smooth

Pork
10 lb pork leg
Score the flesh side only (do not score the skin)
Rub the marinade all over the meat, avoiding the skin
Cover and marinate for 12 hours in the fridge

Cooking
Place pork on a wire rack set over a roasting tray
Cover loosely with foil
Roast at 180°C (350°F) for up to 4 hours until the meat is tender

Remove foil
Increase oven to 225°C (435°F)
Roast uncovered for up to 1 hour until the skin puffs and becomes deeply crispy

Remove from oven
Rest for up to 1 hour before carving

👩🏼‍🍳 A Few Wee Tips & Notes 🔪
– Do not marinate the skin, moisture is the enemy of crispy crackling
– Cooking on a wire rack allows the fat to drip away and helps the skin crisp evenly
– Resting is essential, it keeps the meat juicy and allows the crackling to fully set
– If your oven has hot spots, rotate the tray during the final crisping stage
– A sharp knife or cleaver works best for cracking through the chicharrón

  1. I mean, really, except for the part that it is now mostly only women who do all the work instead of the whole house/community.
    Why should we celebrate Christmas for only one dat?
    It's take sometimes months to prepare, for one day. Not even, just a half day really.

  2. I'm American and here we do both! In my area specifically it's basically a "draw lots" situation where the most prominent family in a group chooses either Eve or Day, and that choice swaps between even and odd years, that way if you have more than 1 family to visit you do so on the opposite day. So, mom's family does Eve this year, then dad's family does Day, and next year it's the opposite.

    If you've more family than that, then you split each day in half… if you live close enough.

  3. Feliz navidad to you and all your family. I am Dominican married to a Dutch man. So in our home we also have a mixed Christmas dinner. We also had bunuelitos this Christmas along with pastelitos. Hope you guys have many of these Christmas'
