Wow I have never seen an instapot used as a slowcooker, everyone uses it for the pressure cooking.
This looks good and incorporates most of the things I prefer so I try it tonight. Won't do celery but will add mushrooms to the liquid. Carrots later cuz I like them a bit firm. Potatoes separately. Likely thicken gravy at end instead so I can play it by ear. This is concise, just over a minute long, you can print the menu, there's no chit chat about 'the world's best pot roast' or such and it uses what I am familiar with and had work before.
