Just made it – tastes like a breakfast burrito though in the future I would do a smear of sausage down the (future) crease of the taco. As she demonstrates, it's too much sausage.

I’d cook the flattened sausage first to make sure it’s flipped to cook both sides and cooked thru. Raw sausage is dangerous. Microbiologist here.

You should probably smash it, cook it, flip it, and then put your tortilla on and cook through. Maybe add cheese after flipping so the tortilla would stick. Just for food safety. Looks great.
