Let’s make a smoked mortadella.
Today we took inspiration from an idea that goes around online, I like to take inspiration from profiles that I follow on various social networks, I include all the references in the description.
We prepare it with pork rub and then we make incisions to allow the smoking to penetrate better, first we incision it vertically and halfway through cooking, we make longitudinal cuts. We bake in our barbecue for 3 hours at 120ยบ celtius and smoke with hickory or mesquite for a strong flavor, or with apple or cherry for a more delicate smoking.
Once this is done, we cut some slices and plate them before composing our super sandwich!
