Smoked Dino beef ribs like a pro on Oklahoma Joes Reverse Flow Offset



1️⃣ Trim & Save – Remove silver skin and excess fat. Don’t toss it! Render those trimmings into homemade beef tallow.
2️⃣ Season – Coat generously with Lane’s BBQ Brisket Rub. No binder needed—let the meat and wood speak for itself.
3️⃣ Smoke – Run your pit at 250°F for the first 4 hours, then bump to 275°F until ribs are probe-tender (like butter in every bite).
4️⃣ Rest – Wrap in foil or butcher paper after the cook, not during. This keeps the bark thick and flavorful while holding all those juices in.
5️⃣ Wood Matters – Flavor is built on your fire. I use Cutting Edge Hickory splits for that rich, bold smoke that pairs perfectly with beef.

  1. Fist time i got a box of cutting edge i was installing a 100 gallon water heater for a customer. He gave me a 300 dollar tip and a box of Cutting Edge pecan because i complimented his custom smoker. I smoked a brisket using that wood and it was Amazing😉.
