I cook with pork shoulder all the time – and believe it or not, I make more than pulled pork. Smoked pork adobo is one of my favorites, because it combines my BBQ background with my husband’s Filipino heritage.
I like to start with a Swift Meats Petite Pork Shoulder Roast. They’re only around 3 pounds, so they’re the perfect size for this recipe.
Adobo is a stew with a soy-vinegar broth. I start incorporating those flavors in the smoking stage by spritzing the pork shoulder every 30 minutes with a combo of soy sauce, vinegar and water.
Once the meat reaches around 170F degrees, I cube it up and finish the dish in a big pot with onions, garlic, peppercorns a few other spices and bay leaves. Let the smoked pork soak up those flavors for about an hour and then spoon it over a big bowl of rice. This dish will really warm your soul.
