Do you like your temp spike? I had one and it shit the bed after a couple uses. Had inconsistent temps all the time. Just wasn’t a fan.
My question is how do you make them less dry, I smoked a tenderloin last Sunday on my pit boss and it was prebrined in a pack like that plus my rub. Do you think injecting it or something would make the outcome less dry?
pulling them at 140? I thought 145 was the number for pork?
