This simple yet delicious pasta with smoked salmon and cream is quick to cook and very satisfying.
This easy pasta with fish recipe is tasty, fresh and not particularly heavy, as so many cream sauce pastas can be. The essentials ingredients smoked fish, wine, heavy cream and black pepper come together for a surprisingly flavorful pasta sauce made even better with bite-sized pieces of smoked salmon.
This recipe makes about 3 servings.
INGREDIENTS
4 tbs extra virgin olive oil
4 oz smoked salmon – diced
1/3 cup white wine
1 tsp salt
1 tsp black pepper
1 cup heavy cream
1/2 lb pasta – penne
some italian parsley leaves to garnish
STEPS
1 – In a large pot bring to boil salted water and then add pasta. Let cook pasta “al dente”.
2 – While the pasta is cooking prepare the sauce. In a large pan heat the extra virgin olive oil, add the pieces of salmon and when the fish is lightly golden, drizzle with white wine. Add salt and pepper and let the sauce thickens. When the pasta is about to be ready, add the heavy cream to the fish and let cook just for a minute. Add the drained cooked pasta to the fish sauce and well mix the ingredient. If the sauce it’s too dry add some tablespoons of cream or pasta cooking water. Garnish with some italian parsley leaves and serve right away.
