    Made this Iberico pork shoulder roast from @eat.campogrande , pulled pork style, on my Weber kettle using the charcoal snake method. No wrapping during the entire cook, but I wrapped it up in Iberico pork lard to make it extra juicy at the end for the next day when I was ready to smash!

    Smoked for 14 hours at 250-275F spritzing every hr after the 1st 2 hrs. Also rotating the grate to keep the roast opposite of the lit coals and wood as they burn down. Most of the time the top vent stays almost all the way open and the bottom vent barely open. I would adjust when I see temperature spikes like after I have the grill open to check on it or while spritzing and the wood chunks flare up. Using the same @jealousdevilcharcoal Max briquettes each time I use this method to keep consistent results. I can confidently say this is one of the juiciest pulled porks I’ve ever made—Iberico pork is truly the Wagyu of pork!
