Soto Betawi

Ingredients:
• 500g beefsteak (cut into bite-sized pieces)
• 200ml coconut milk
• 300ml milk
• 1/4 cup cooking oil
• 500ml water
• 2 tomatoes, chopped
• 500g potatoes, baked
• Fried onions, for garnish
• Emping, for garnish
• Spring onions, chopped, for garnish
• 1 lemongrass stalk, bruised
• 2 lime leaves
• 2 bay leaves
• 1 piece of lengkoas (galangal), bruised
• 2 star anise
• 2 cinnamon sticks
• 1 tbsp sugar
• Salt and pepper, to taste
• 1 bouillon cube

For the Spice Paste:
• 2 large shallots
• 5 cloves garlic
• 1 tsp coriander seeds (ketumbar)
• 3 candlenuts (kemiri)
• 1 tsp turmeric powder
• A thumb-sized piece of ginger

Instructions:
1. Preheat the oven to 180°C (350°F). Cut the potatoes into pieces and bake for about 45 minutes or until golden brown. Set aside.
2. Chop the tomatoes according to your preference and set aside.
3. Cut the beefsteak into bite-sized pieces and set aside.
4. Grind the shallots, garlic, coriander seeds, candlenuts, turmeric powder, and ginger into a fine paste.
5. Heat the cooking oil in a large pot over medium heat. Add the ground spice paste, bay leaves, lemongrass, lime leaves, star anise, cinnamon sticks, and lengkoas. Sauté until fragrant.
6. Pour in the water and bring it to a boil. Then, add the sugar, salt, bouillon cube and pepper, and adjust the seasoning to taste.
7. Add the beef to the pot along with the coconut milk. Stir well to combine, allowing the flavors to meld. Once the soup returns to a gentle boil, turn off the heat.
8. In a bowl, place the baked potatoes and chopped tomatoes. Pour the soto betawi soup over them and garnish with spring onions, emping, and fried onions.
