Years ago I decided that if my family was going to eat bread, then it was going to be better than store bought and I committed to making all of our bread products from sourdough.
We enjoy both white and whole wheat versions of this recipe plus focaccia, croissants and so much more! I can teach you all of it!

Ingredients:
65 grams (1/3 cup) starter, activated
200 grams (3/4 cup plus 2 tablespoons) warm buttermilk
115 grams ( 1/2 cup) warm water
12 grams (1 tablespoon) sugar
15 grams (1 tablespoon) avocado oil
400 grams (3 1/2 cups) bread flour
100 grams (3/4 cup plus 1 tablespoon) all purpose flour
9 grams (1 1/2 teaspoons) fine sea salt

I want to try this but I'm wondering about the dough temperature and bulk fermenting? My kitchen sits at about 72-75F and I'm not sure if I were to follow this same process that it would turn out the same.
I was so excited that I forgot and used chlorinated water! I just trashed it and will start again tomorrow
40 minutes at 400 celsius? Did I get this right? I've noticed my sourdough breads are not rising in the oven, only outside. I'm wondering if the temperature is too hot or not enough. 😢
If it’s not stretchy should I add more water or does that mean my starter is not active enough?
