  1. I love me some fried pig feet and yours looks really good. However we don't batter and flour ours. We just stew them until tender, dry them off and then fry. The fat renders out a bit more easily, the tendons have no give and the skin takes on a chicharron character.
    We also fry chitlins, just delicious 🤤. We do however put a light batter on those. I would love to see your take on some fried chitlins 🤩.

  3. I was raised in NW Florida eating pickled pig feet and souse (hogs head cheese). You remind me a little of my daddy. He loved life, hated raw onions, and would tear up onions rings that were just about burned. Today (Flag Day) would've been his birthday…he would have been 80.   4. I have been frying pigs for years I use self rising flour and self rising corn meal mixed together they aren’t to sticky when you fry them taste a lil like tripe to me I love frying them I’m 43 I have been frying them for about 5 years I love them 😂
