Use flaky breadcrumbs! Toasted in olive oil and add it when ready to serve. You will love the texture… I tell ya.
A couple things: You don't want the garlic 'brown' at all. It should cooked to just before the point of turning color. The garlic should be sliced also for the most flavor. Pasta should be cooked 1 or 2 min short of al dente and finished off in the pan. The original recipe doesn't have parsley and definitely NO cheese. It's considered sacrilege to put cheese on this dish, but in the north of Italy they use a little lemon juice sometimes. Either way, cheese or lemon it's a different dish. Originally just olive oil, garlic, pepperoncino flakes (and salt).
Nothing wrong with a different twist on a dish, but it's not the original. I've used some parsley, fresh basil and used Parm. Reggiano as a topping not mixed in. That would be 'pasta', not aglio e olio strictly speaking.

in aglio e olio there is no parmesan, or any cheese at all. also you cook the pasta to finish in the pan with the oil and added pasta water.

I make this simple recipe all the time but I do like some petite diced tomatoes to the olive oil while cooking..

Looks Gr8, but the one mistake, ya made, ya put the strainer on the sink surface, when you dumped your boiling water into the strainer, you had back wash with the surface of the sink into the food. Fail!!!!
