Spaghetti Carbonara (Japanese-inspired Pasta Recipe) | Cooking with Dog

80g Spaghetti (2.8 oz)
1000ml Water (4.23 cups)
7g Salt to make 0.7% salt water (0.25 oz)

1 Egg
1 tbsp Parmesan Cheese, grated
1 tbsp Milk
Black Pepper, coarsely ground

½ tbsp Extra Virgin Olive Oil
30g Slab Bacon, unsliced (1.1 oz)
1 Garlic Clove, crushed
1 tbsp White Wine

15g Spring Onion Leaves, chopped (0.5 oz)
Parmesan Cheese, grated
Black Pepper, coarsely ground

  1. 8 and a half years… So long ago. I've been watching a lot of Carbonara videos lately. Respect that you change the recipe and you don't call it "Traditional". 🙂 like many people do who put insanely more things in it than you do and call it that. 🤣

  2. this recipe might not be roman traditional but its ridiculously delicious, i've tried it. deglazing the fond with white wine and using the residual heat of the water so not to curdle the cheese is next level! well done

  4. I've always had a soft spot for Spaghetti Carbonara. I really like Chef's version of it, with the creamier sauce. I definitely want to try it with the green onion toppers, because, c'mon. What doesn't pair well with green onions? Thank you for sharing this recipe with us, Chef! <3 Much like Francis at the end of the video, my stomach was whining for a taste of your delicious carbonara.
