This time we made a spherical tiramisu!
I added gelatin so it looked like mousse. It was very tasty and not too sweet.

[Ingredients]
[Tiramisu cream] Silikomart SF102 x 5
200g : Mascarpone cheese
50g : Egg yolk
60g : Granulated sugar
10g : Coffee syrup
120g : Fresh cream (36%)
8g : Gelatin
32g : Water
Mint
Fold granulated sugar into egg yolks
Raise the temperature to about 50°C while boiling water.
Let stand firmly.
Stir in the mascarpone.
Fold in the coffee syrup.
Dissolve the gelatin and add it.
Beat in the cream until combined.

[Coffee syrup]
4g : Instant coffee
90g : Hot water
10g : Sugar

[ Sponge (biscuit chocolat) ] 17.5 x 17.5 cm
A – Egg yolk: 28g
A – Granulated sugar: 22g
B – Egg whites: 44g
B – Granulated sugar: 22g
Cocoa powder: 12g
[ How to make biscuit chocolat]
1. Whisk A
2. Whisk B
3. Mix 1/3 of the meringue into the egg yolks and add the cocoa powder and combine with a rubber spatula.
Add the remaining meringue and mix until combined.
Preheat oven to 180°C and bake for 10-12 minutes.

  1. Tiramisu in spherical shapes are very creative. However, the lady's fingers in the middle are too wet. The difficult part of soaking the lady's fingers to make them have coffee flavour and at the same time, it shouldn't be too wet. I won't like the lady's fingers but I love the cheese & the cookie. Usually, I don't use soaked lady's fingers because of that. Although it's not totally Italian, I prefer to have coffee sponge cake to substitute the lady's fingers instead. The cake texture is a lot better than soft wet soaked lady's fingers. Brushing liquid into cakes & cookies is not an easy technique. Once when it is too wet, no matter how the flavour gets into the cakes or cookies, they won't taste good.
