Bread Machine Corn Bread with Chiles and Cheese Recipe
Servings: 2 lb. loaf
1 C whole milk, room temperature
6 T unsalted butter, melted and cooled
2 large eggs, room temperature, lightly beaten
1, 4-ounce can, diced green chiles (I used mild)
1 ¼ C bread flour
1 C corn meal
2 T cane sugar
1 tsp. baking powder
1 tsp. baking soda
¾ tsp. kosher salt
1 C shredded sharp cheddar cheese
Pro tip: spoon your flour into your measuring cups and then level for precise measuring.
Read your bread machine’s manufacturer’s instructions for order of ingredients. I add mine to the bread pan in the order listed above.
Place all the above ingredients into the bread pan. Set your machine to quick bread or cake setting. Set for light crust. The setting should be between 1:38 and 1:44 minutes.
When the timer goes off, take the pan out of the machine (make sure to use pot holders to protect your hands).
Use a spatula to go around the edge of the pan. Turn the bread out onto wire rack to cool. It’s best to let the corn bread cool for at least one hour to avoid crumbling.
