Today, we cooked spicy pork curry sri lankan, which is completely different from the pork curry we posted a few months ago. We had this curry for lunch with homemade Dosa. However, this pork curry is ideal with white rice, string hoppers, bread, naan, roti, paratha, chapatis, etc.,

Ingredients
900g of pork loin chops (other parts can be used)
4 Tbsp red chilli powder
2 Tbsp coriander powder
1 Tbsp garam masala
1 Tsp crushed pepper
1 Tsp fenugreek seeds
1 Tsp garcinia paste
1” ginger (chopped)
2” cinnamon piece
5 cloves of garlic (chopped0
3 green chillies (split in half)
1/2 a brown onion (sliced)
10 curry leaves
4 cups of water(or water to cover pork)
1 Tsp salt (salt to taste)

Process:
Heat up a pan over high heat
Add pork, crushed pepper, salt and mix well
Cover the lid and cook until pork releases its juice
Continue cooking over high heat until all juice disappears from the pan
Then, add chilli powder and give a good mix (we thought 4 Tbsp of chilli powder was too much and did not add all at once, later realised that there was not enough spiciness and added the rest)
Add coriander powder, garam masala, fenugreek seeds, chopped ginger, chopped garlic, give a good mix, cover and cook over medium heat
Add curry leaves, split green chillies, cinnamon, garcinia paste, sliced onion, give a good mix, cover the lid and continue cooking over medium heat
Periodically tossing or stirring, cook for about 5-7 min over medium heat
At this stage, pork should be moist. Add water until pork is completely covered
Cover the lid and bring it to a boil over high heat
Turn the heat down to medium, stir and continue cooking for about 10min or until the pork is cooked
The pork is ready to be served
We served it with homemade Dosa and it was fantastic
