  1. Tok jhal chicken dry fry
    Ingredients:
    1kg chicken curry pieces small cuts, marinated w 1tsp salt, 1tsp chilli powder, 1/2 turmeric, 1tsp coriander, 1tsp cumin powder, 1/2tsp gorom moshla powder.
    1tbsp ginger garlic paste
    2 cups sliced onions
    1/3 cup oil to cook
    Tamarind pulp 1 cup
    To make the spicy jhal fry moshla-
    1/2 cut onions, a few cloves garlic, 4-5 dry red chillies, 1/2tsp mustard seeds, 1 cardamom, 3 cloves, 1/2tsp coriander seeds, 1/2tsp cumin seeds, 1/2 cinnamon, 1/2 mace. Dry roast them for a few minutes until fragrant and then add them all in a mixer grinder/blender and blend w a little water until a coarse paste.
    Coriander, chillies and onions to garnish.
    Cooking method: Marinate the chicken and leave it for 30min to an hour. Best overnight.
    In a pan heat some oil and fry the chicken until golden brown. Then take it out. In the same oil add onions and cook until brown. Add ginger garlic paste, the jhal fry moshla and mix well. Add water and cook covered until there’s no raw smell. Add the fried chicken and mix well. Cover and cook on medium high stirring occasionally. After 10min of cooking, add tamarind puree and give it a mix. Add a splash of water and cook for another 5-7min until chicken is tender and gravy is drying out. Add lots of fresh chillies and coriander and fry for a few more minutes.
    Serve hot with lots of fresh onions, roti/porota.
