Pad Cha Talay ผัดฉ่าทะเล is a spicy Thai seafood stir fry that’s hugely popular in seafood restaurants across Thailand. Here’s a quick and simple Thai recipe for you to make it in the comfort of your own home.
Ingredients
Serves 2
6-8 large prawns
1 squid tube
1 tbsp of red curry paste
A handful of fingerroot (grachai)
A handful of Thai basil
4 Thai aubergines (eggplant) or any small aubergines you like
1 tbsp of oyster sauce
1 tbsp of fish sauce
1/2 tsp white peppercorns
A handful of mixed fresh chillis of your choice
Fresh green peppercorns
Sugar to taste
