  4. For anyone who might be scared of the heat, the Scotch Bonnet has a sweet counterpart that goes by multiple names, such as "Cachucha", "Ají cachucha", and "Ají Dulse".

    If you want the fruity, complex, gorgeousness of scotch bonnets, but none of the heat, these peppers can be bought as plants and grown.

    You can swap one of the scotch bonnets or 2 with one of these and you still get that great flavor.
