Ingredients for 2 people:
100g broad beans
100g petit pois (peas)
1 small red onion, finely chopped
1 clove of garlic, minced
1 tablespoon olive oil
Salt and pepper to taste
50g Parmesan cheese, grated
A handful of fresh mint leaves
200g Trofei pasta (or any pasta of your choice)

Instructions:
Begin by preparing the broad beans. Thaw them in warm water for a few minutes, then remove the skins by gently squeezing. Set aside.
In a pot of boiling salted water, cook the pasta according to package instructions until al dente. Reserve a cup of pasta water before draining.

Meanwhile, heat olive oil in a skillet over medium heat. Sauté the chopped red onion and minced garlic until soft and fragrant, about 2-3 minutes.
Add the prepared broad beans to the skillet and cook for another 2-3 minutes until heated through and slightly softened. Season with salt and pepper.

Stir in the frozen petit pois and continue cooking for 2 more minutes until everything is well combined and heated through. Add the cooked pasta to the skillet along with a splash of reserved pasta water. Toss gently until the pasta is coated in the vegetable mixture. Adjust the consistency with more pasta water if needed.

Remove the skillet from heat and stir in the grated Parmesan cheese until melted and creamy. Tear the fresh mint leaves and sprinkle over the pasta, giving it a final toss to incorporate.

Serve immediately, garnished with extra Parmesan cheese and mint leaves. Enjoy your delightful spring pasta dish!
