I usually only flip once. But I slowly bring them up to heat first and then aggressively sear in a pan once they're at about 110 internal. Never have the gray line of death. I imagine you're under much tighter time constraints in a restaurant though so I understand the process.

That's the right way of seasoning. Professionals usually season steak before frying.
I use Maldon salt while cooking too lol. I just love the texture and you can pinch a lot at a time. Buy in bulk and it’s not expensive.
I don’t know about the flipping it every 20-30 all you need is one flip…salt before or after is ok…but all you need is one flip…more you flip more dry it become
