➖ Recipe ➖

Taco Seasoning – 

1 1/2 tsp (4g) – Onion Powder
1 1/2 tsp (4g) – Garlic Powder
1 1/2 tsp (4g) – Sweet Paprika
1 1/2 tsp (4g) – Ground Cumin
1 tsp (2g) – Dried Oregano 
1/2 tsp (0.5g) – Red Chilli Powder
Salt & Pepper

Beef & Vegetables –

2 Tbsp (40ml) – Vegetable or Olive Oil 
650g (1.4lb) – Flank or Skirt Steak (Rump can be used)
2 – Brown (Yellow) Onions, Large Sliced 
1 – Red Bell Pepper, Sliced 
1 – Yellow Bell Pepper, Sliced
Salt & Pepper 

Pico Guacamole – 

3 – Roma Tomatoes, Deseeded & Finely Diced 
1 – Small White Onion, Finely Diced 
15g (0.5oz) – Coriander (Cilantro), Roughly Chopped 
1 – Jalapeno or Serrano Chilli, Finely Diced
1 – Lime, Juiced 
2 – Avocados, Mashed 
Salt & Pepper

Tortilla & Fillings – 

8-10 – Corn or Flour Tortillas, Warmed 
Coriander (Cilantro)
Lime Wedges to Serve 
Chilli Sauce of Choice 

Method – 

1. Combine all the taco seasoning ingredients in a bowl. Drizzle the beef with a splash of vegetable or olive oil and rub 2/3 of the taco seasoning all over. 

2. For the pico guacamole, combine all ingredients in a bowl and mix well. Season and store in the fridge until ready to serve. 

3. Add the onions and bell peppers (capsicum) to a bowl. Drizzle with vegetable or olive oil, then add the remaining taco seasoning. Mix well to coat. 

4. Place a pan over medium-high heat, add 1 Tbsp (20ml) of vegetable or olive oil, and sauté the onion and pepper mix for 5-6 minutes, or until soft and slightly al dente. Remove and set aside. 

5. Place the same pan back over medium-high heat. Let the pan get hot, and add the remaining 1 tbsp (20ml) vegetable or olive oil. Sear the seasoned steak for 2-3 minutes on each side until golden and cooked to your liking. This method is for medium rare, and the steak will have an internal temperature of 52.c—125.f. The internal temperature will rise as it rests. Remove and allow to rest for 5 minutes. Slice into strips against the grain. 

6. Warm the tortillas and place down the pico guacamole. Top with sliced beef, onion and pepper mix, pickled onions, coriander (cilantro), lime wedges and your choice of chilli sauce. Dig in.
