Patties
1 ¼ lb ground beef
8 slices american cheese
Oil
Salt & pepper

Sauce
½ cup mayo
¼ cup ketchup
2 Tbsp mustard
1 tsp worcestershire sauce
1 pickle diced
Salt & pepper

Frites
5 yukon gold potatoes
5 cups fry oil
Salt

Other ingredients

½ red onion, sliced
4 brioche burger buns

For the sauce, in a bowl add the mayo, ketchup, mustard, worcestershire sauce, salt & pepper. Mix well and set aside.

For the frites, cut your potatoes into shoestring fries then add to an ice bath then dry them off with paper towels.

Heat your oil to 375F and fry your potatoes in batches for 4-5 minutes until golden brown then remove to a wire wrack and season with salt.

Divide your beef into 8 balls. Get a cast iron skillet smoking hot then spray with oil, add a ball of beef and smash it with a spatula or burger press then season with salt & pepper. Let cook for 1 minute then flip add cheese, once melted remove.

To assemble on the bottom bun add sauce, onions, two burger patties then a pile of fries then the top bun.
