Trim to preference
Season with seasonings of choice
Pin down and tie up to hold structural integrity
Reverse sear until 120-125f
Sear 50-60 seconds, then rotate 90 degrees
Flip and repeat on the other side
Make sure hash marks form before rotating!
Pull at 130f
Slice up the steak
Spinach and cheese tortellini
Boil until el dente
Finish in pesto Sauce
