Steak Tartare!

8 oz beef tenderloin (filet mignon)
2 Tbsp mustard
1 egg yoke
1 1/2 Tbsp neutral oil
1 Tbsp Worcestershire sauce
1/2 tsp salt
1/2 tsp pepper
1 Tbsp brunoise shallots
1 Tbsp brunoise parsley
1 Tbsp thinly sliced chives
1 1/2 Tbsp burnoise Cornichons
1/2 Tbsp finely chopped anchovies

Method

In a large bowl, arrange your ingredients as shown. Begin by mixing your egg yoke with the oil and mustard. Once you’ve added all your oil, mix everything together. Serve with potato chips and enjoy!
