Steam-Sauna Chicken: Ingredients & Recipe Below:-
– Dry roast 2 Tbsp poppy seeds, 16-20 cashew nuts, 1 Tbsp each of stone flower, coriander seeds, cumin seeds, 1 star anise, 1 mace, 5 cloves, 3 green & 1 black cardamom, 2.5 inch cinnamon stick, 2 bay leaf and 6 Kashmiri red chillies on low flame for 2.5 minutes. Add in 6 crispy fried brown onions, 3-4 tomatoes and 200 grams curd blending all of it together into a smooth paste.
– Marinate 1 kg chicken in the same utensil in which you’ll cook it with 7 tbsp oil, all of the paste prepared above, 1 Tbsp each of salt, red chilli powder, roasted crushed kasoori methi, 3/4th tbsp each of black pepper powder, Kashmiri red chilli powder (optional), half Tbsp fennel powder and 2 Tbsp ginger-garlic paste. Let it sit in this marination for half an hour.
– Now put the chicken on high flame for 3 minutes then add in half a cup of water. Seal off the Kadhai/Pot closing off any steam escape points. Let the chicken cook on high for another 2 minutes then turn flame to low and let it cook on dum for 35-40 minutes shaking the pot evenly at regular intervals so that the chicken doesn’t stick at the bottom.
– Garnish with chopped coriander leaves then place a flaming coal topped with 2 cloves in between and add in a Tbsp of ghee on top of it. Immediately close the lid allowing the smoke to penetrate the chicken for 5 minutes.
