Hi everyone, welcome to Souped Up Recipes. Today, we are making Qing Jiao Rou Si (青椒肉丝) – Stir Fry Pork With Green Chilies. It is not a fancy dish but it is quick, easy and everybody loves it so it ends up being a staple recipe for most Chinese families.
🥢RECIPE-
INGREDIENTS
– 280 g (10 oz) of pork, sliced into strips
– 1/8 tsp of salt to marinate the pork
– 1 tbsp of Chinese cooking wine (Amazon Link –
– 1 tbsp of soy sauce (Amazon Link –
– 1 tsp of cornstarch (Amazon Link –
– 1/4 tsp of baking soda (Amazon Link –
– 1 tsp of five-spice powder (Amazon Link –
– 1/2 tsp of dark soy sauce (Amazon Link –
– 3 tbsp of oil to stir fry
– 2 tsp of Sichuan peppercorns (Amazon Link –
– 3 cloves of garlic
– 3 slices of ginger
– 6-8 piece of red dried chilies (Amazon Link –
– 1/4 of an onion, sliced thinly
– 3 – 4 piece of green chilies, sliced thinly
– 1/2 tsp of salt for the veggies

do you still believe you should soak the pork in salt water before marinating? I saw your video from 4 years ago where you recommend that.

I've prepared but without the Sichuan peppercorn. Amazingly delicious dish. Highly recommended (If you like spicy food).
In my case the corn starch on the meat did cause sticking it to the wok and forming a burned and charred layer-crust that I could only remove with water and brush, which is a "no no" with the hand forged carbon steel wok. Moreover, the taste of meat lacked depth and I figured I had to break it with some sweetness. Only after I put in 2 tablespoons of honey it acquired the finger licking taste of a Chinese takeout. But I cook 4 times more than what is shown in your videos, because i have to feed the whole family. I had to make this comment, it is in no way intended to offend you, I only meant to share my experience. I enjoy your channel very much.

Yummy- unfortunately because I was a big chicken and thought perhaps the peppers would be too spicy for me, I went with finally sliced red bell pepper
I’m sure it change the whole taste of the meal but it was still very yummy! A very simple, very fast meal. The marination is what gave me most of the flavor because I didn’t have the heat from the peppersNow i want to eat Real Chinese Food I feel like here in America where getting a fake version. Souped Up Recipes make me so hungry. i suppose I'm gonna have to just try to wing it myself hope and pray I get it right ty Souped up Recipes wish I could try your dishes they all look so good!

It also boils down to the science of marinades. There have been done tests on marinades that concluded that salt was pretty much the only ingredient that somewhat went into the meat. The rest remained mainly on the surface.

I used your soaking in salted water method and the pork came out so tender it is unbelievable. Not sure if that was the trick or the way I cut it and stir fried it but it was great. I sliced the pork rather than cut into strips.
