INGREDIENTS

Crust:

1 & 2/3 Cups Plain Flour
2 tbsp Natvia
Pinch of Salt
100g Butter
1 Egg
1 tbsp Full Cream Milk

Strawberry Jam:

250g Fresh Strawberries
2 tbsp Natvia
Few drops of lemon juice (1 Lemon for recipe)

Filling:

150g Butter
2/3 Cup Natvia
2 Eggs
1 & 1/4 Cup Almond Meal
Zest from 1 lemon (same single lemon)
Juice from rest of lemon
Flaked Almonds for garnish

METHOD

Preheat oven to 180°C Fan.

Crust:

Start with 1 & 2/3 Cup Plain Flour, 2 tbsp Natvia, pinch of salt and 100g of butter.

Make sure your hands are clean, and rub the butter through the mixture until it has formed fine crumbs.

Add 1 egg & 1 tbsp full cream milk to the mixture and roll it together in your hands until it has stuck together and formed one large clump.

Roll the united mixture into a ball in your hands and flatten out on a bench.

Once the ball of crust mixture has become slightly shaped like a disc, wrap it with cling wrap and place it in the fridge to chill for 30 minutes.

Strawberry Jam:

Cut 250g Fresh Strawberries & place them in a saucepan.
Add 2 tbsp Natvia to the strawberries and place on medium heat.

Add a few drops of lemon and continue to stir the mixture whilst it is heating.

Stir and simmer the mixture until it has begun to break down into a sauce/jam.

Crust:

Take the chilled crust out of the fridge and continue to flatten on the bench with your hands.

Using a rolling pin, carefully flatten out the mixture until it has become the width of a round baking tray.

Take the rounded baking tray and evenly spread the flat crust out into the tray.

Pull the excess crust pastry away from the edges of the round baking tray and evenly refine the edges of the tart.

Poke holes across the face of the crust with a fork.

Cover the crust mixture inside the baking tray with baking paper, and fill it with baking balls/ beans/ rice. (anything for doing a blind bake)

Blind bake the crust pastry at 180°C for 15 minutes.

Filling:

In a new bowl, add 150g butter.

Add in 2/3 Cup Natvia and whisk the mixture until it has combined.
Add 1 egg and continue to whisk the mixture.

Add another egg, and continue to whisk/stir the mixture until combined.

Add 1 & 1/4 Cup Almond Meal, Zest from 1 lemon, and juice from 1 lemon.

Stir the filling mixture until it has finally combined evenly.

Finale:

Remove the crust from the oven.

Evenly spread the strawberry jam mixture across the face of the warm crust.

Evenly Spread the filling onto the top of the jam crust.

Once the filling has been laid, sprinkle flaked almond to garnish and place in the oven for 30 – 40 minutes at 180°C.
