Ingredients:
Serves 6 pax
Some cooking oil
2 pieces of cinnamon bark
2 pieces of star anise
1 teaspoon of white peppercorn
1/2 teaspoon of cloves
1 bulb of garlic w/ skin on
4 slices of ginger
2 pig knuckles
10g of rock sugar
1 piece of bay leaf
2 cups of Chinese white rice wine
1/2 cup of low sodium light soy sauce
1 cup of premium dark soy sauce
Top the pot up with enough water to cover the pig trotters
1 teaspoon of salt

Recipe turned out well. Just take not of the soy sauce and dark soy sauce quantity, dish can get a bit salty if ratio to meat is not right.

That is NOT a pigs trotter (pigs foot). That is the shank (hock) – between the hind foot and ham.

Its not trotter it is pork knuckle, the trotter (foot) has been removed. Knuckle is a lot more meat, trotter is mostly bone. These are "pork knuckle" or "pork hock".
