oil is getting so expensive here it's not really a deal to make my own, but it would probably reduce plastic!
Love this, I have a similar recipe with an identical stick blender method but with aquafaba instead of soy milk. It really bugs me how people think egg is essential or important for mayo, I guess it has been aggressively marketed to emphasise the egg since this sounds better and healthier than just calling it what it is, very thick and spreadable veg oil
I've had mayo not emulsify before. What would you do in the event it doesn't thicken up? Start over?

How long would this keep for in the fridge? Just wondering since soy milk expires fairly quickly and can’t imagine needing/using that much mayo in a short time frame 🙏🏻
