Hi, great videos. I tried to follow the video with the following differences: 1. self-made dashi with bonito flakes and no seaweed 2. thin slides of ribeyes. 3. Added sugar. It tasted like boiled beef with a minor salted and sweet taste. I am missing the very sweet taste – may be sweet onion taste? What did I do wrong? Thanks. B.

Sorry i want to ask, if i use 500 gram slice beef. It would be 5 tablespoon soy sauce and 4 tablespoon mirin and 400 ml dashi?
