Super Moist And Velvety Lemon Loaf Cake



How to make Lemon Loaf Cake that is super moist and velvety with simple ingredients you can find at home.

Here’s what you’ll need:
1 cup sugar (200g)
2 teaspoon lemon zest (8g)
1/2 cup softened butter (110g)
2 tablespoons of veg oil
2 large eggs (room temperature)
2 tablespoons of lemon juice (30ml)
1 and 1/2 cup all purpose flour (187g)
1 teaspoon baking powder(5g)
1/2 teaspoon salt(3g)
1/2 cup milk (120ml)

LEMON GLAZE:
1/3 cup icing sugar (50g)
2 tbsp lemon juice (30ml)

  2. Hi I bake in microwave oven (Panasonic). When i took measurements as mentioned in the recipe cake is not baked in the middle. So. I want to reduce the amounts of ingredients. Can you please tell me how much other ingredient I’ve to take if I take only one cup of flour.

  5. I try it & i can say it just soooo nice but i did just 180gr of sugar and it bit so sweet so for me next time it better just 170gr of sugar and of course without sugar and lemons jus at the end.. We can replace it with almond slices just for decoration… Thank you for sharing the receipt

  7. I made this cake, and all my ingredients got to waste as when it came out it had large cracks on top and as soon as I took it out of oven it got deflated, in front of my eyes. My 3 hours efforts got to waste ☹️😞

  8. I NEVER use vegetable oil as it has soy and is NOT HEALTHY, so I use organic unrefined coconut oil instead along with organic unsalted butter. Always chose unrefined coconut oil because the refined version has been chemically altered to remove the wonderful fragrance. Also I always use unsalted butter because most recipes already add salt. And instead of a loaf I baked this using a buttered 8" X 8" X 2" size baking dish or cake pan and at 350 F oven.
