Ingredients
FOR FILLING
500g pork mince
3 tbsp soy sauce
1 tbsp oyster sauce
½ tsp white pepper powder
½ tsp salt
1 handful chopped spring onion
1 packet dumpling wrappers
1 dish of water (to seal wrappers)

FOR SERVING
Shredded ginger
Black vinegar (Chinkiang)
Chilli oil (Mala or Lao Gan Ma)
Spring onions (green part)
Toasted sesame seeds

1. Combine and mix all ingredients for filling.
2. Wrap dumplings and seal with water.
3. Boil in water until dumplings float and skins are translucent.
4. Serve with chilli oil, spring onion and sesame seeds, or in a light clear broth.
5. Consume with ginger and vinegar dipping sauce.
