America’s Test Kitchen is a real 2,500 square foot test kitchen located just outside of Boston that is home to more than three dozen full-time cooks and product testers. Our mission is simple: to develop the absolute best recipes for all of your favorite foods. To do this, we test each recipe 30, 40, sometimes as many as 70 times, until we arrive at the combination of ingredients, technique, temperature, cooking time, and equipment that yields the best, most-foolproof recipe.

Each week, the cast of America’s Test Kitchen brings the recipes, testings, and tastings from Cook’s Illustrated magazine to life on our public television series. With more than 2 million viewers per episode, we are the most-watched cooking show on public television.

More than 1.3 million home cooks rely on Cook’s Illustrated and Cook’s Country magazines to provide trusted recipes that work, honest ratings of equipment and supermarket ingredients, and kitchen tips.

  1. I came here looking to learn how to get "all of the meat out of THE BODY"; you neglected to show how to get it "out of the body". It's common knowledge that the best meat is in the tail and claws and you did a good job showing just how to, but there is also meat in the body! I wish you went all the way and showed how to get it out of the body as well.

  2. first is you never cook a lobster with the elastics on. second thing is you cut the claw from the underside not the upper, the underside is lighter in colour and softer… disappointed so i'm out before i spot more mistakes…

  3. Another trick for the tail is you dont have to cut it to remove the bowel line; where the tail connected to the body theres going to be some flesh like a tab on top, peel it back to the other end and you get a strip of flesh and you reveal the bowel line to remove and you have a whole tail to enjoy. Those fanlike tips on the tail also yeild meat.

  4. Don't put your lobster under running water, it takes away the taste, same reason why you steam it and not boil it. A good fresh lobster tastes much better mainly because of the saltiness left over from the ocean, you wash it and the taste is gone.
