Mutton Pickle (Gosht Ka Achar) — a tangy, spicy, and long-lasting meat pickle that’s a must for Bakrid celebrations.

🥩 Hyderabadi Mutton Pickle (Achari Gosht)
🍳 Servings: Makes approx. 1 kg of pickle
🕒 Storage:

Room temperature – up to 1 month

Refrigerated – 2 to 3 months

🧂 Ingredients:
➤ For Cooking the Meat:
Boneless mutton – 1 kg (cut into small pieces)

Ginger garlic paste – 3 tbsp

Turmeric – 1 tsp

Salt – 2 tsp (initially)

Water – 1 cup

➤ For Achari Masala (Pickle Spice Mix):
Cumin seeds – 1.5 tbsp

Mustard seeds – 1.5 tbsp

Coriander seeds – 1 tbsp

Dry red chilies – 6

Fenugreek seeds – ½ tsp

Nigella seeds (kalonji) – 3 pinches

➤ For Frying the Meat:
Oil – 350–400 ml (use mustard or neutral oil)

➤ For Final Tadka (Tempering):
Cumin seeds – 1 tsp

Mustard seeds – 1 tsp

Dry red chilies – 6–7

Garlic – 25 cloves (lightly crushed)

➤ To Mix with Fried Meat:
Ground achari masala – from above

Red chili powder – 4 tbsp (can use pickle-specific chili powder)

Lemon juice – juice of 8 lemons

Salt – approx. 1 more tsp (adjust to taste)
