My sweet potato dump cake recipe is easy and delicious! With an old-fashioned cake mix crumble topping and southern spices like cinnamon and nutmeg, this dessert has the tastes, colors, and textures that make it one of the best fall desserts. Orange juice and zest brings out the sweet potato flavor and adds moisture, complementing the other ingredients harmoniously. The filling is moist without being watery, allowing the crumble topping to get perfectly crispy, creating a fantastic texture contrast. Even though some people might think it’s unimportant, the this dessert had a fantastic color contrast as well with the golden-brown topping and the bright-orange filling. This was definitely good enough to eat on its own, but I highly recommend serving it with ice cream–I’m not sure why (I know it sounds weird)–but vanilla ice cream tends to go with southern-style sweet potato desserts that are flavored with brown sugar, cinnamon, nutmeg, and other spices. Overall, I was really pleased with how this turned out, and I think it’d be one of the best fall desserts–if you like sweet potato casserole and are looking for a unique dessert, this would be perfect. In fact, it’d be great on a holiday table, such as for Thanksgiving or Christmas, or even Easter, Mother’s Day…or any day! Sweet Potato Dump Cake Ingredients
4 lbs raw sweet potatoes
***about 4.5 cups cooked sweet potato flesh (I measured 1400g)
1/2 cup light brown sugar (120g)
1 cup citrus juice (**I recommend using all orange juice)
1 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon nutmeg
1/8 teaspoon cloves
1/8 teaspoon salt
1 Tablespoon citrus zest (**I recommend using all orange zest)
1 15.25 oz box white cake mix
2 sticks butter, unsalted
**(Although I used a combination of lemon and orange juice/zest in this recipe, I recommend using just orange since the lemon flavor didn’t come through much anyway)
