METHOD
Prepare the sweet potato: Prick the skin, wrap in a piece of kitchen roll, and microwave until soft, approx. 4 minutes. Remove the skin, mash the flesh of the potato and put the mash in a blender.
Add the banana, yoghurt, milk and flavouring to the blender, and process well.
Pour and serve: Enjoy as a smoothie or mousse, topped with your favourite fruit and chopped nuts or grated dark chocolate. Alternatively, chill and use later. Ideal as a topping for desserts. And will freeze.
RECIPE
150g sweet potato
1 overripe banana
100g natural yoghurt
150ml low fat milk
¼ tsp. vanilla essence or cinnamon
