Today I made Tacos Al Pastor on a grill, with a very unique charcoal situation. It’s been on the to do list since 2020, and never got around to building a traditional set up, so I’m finally getting around to it, on the grill for my first attempt! They came out fanTASTEic! Savory, salty, sweet, it was a perfect taco! Definitely recommend giving this one a try!

Terrific content, as always! I've made shawarma on the Oklahoma Joe Highland using a similar technique, except I used the firebox exchange as the heat source and placed the plate with the meat on the bottom of the cook chamber. It gave an unexpected benefit that the finished meat tasted more like it had cooked over a wood fire.
Your channel is currently my 4-year-old's favorite show. Yesterday in the sandbox he mixed a pail full of "Chud rub" and was busy "firing up the pit." We haven't grilled much ourselves yet, but we're hoping to start soon. So thanks for the wholesome family content 😂😂😂
Hey big dog if you thin slice the pork like they do in central Mexico, you probably would get a more even cook
If you added a base with cleaned skate board bearings(relube with coconut oil)& used a splitting wedge tilt to tilt the base towards the fire. It could be possible to have a self rotating spit. As water boils off & meat contracts. Heaver less cooked meat rotates the spit towards the fire. Cheers
The trick is you're not trying to cook the meat the whole way through. What you want to do is trim off as much as you need as it cooks. That way you get char on each piece of meat the way gyros are made.

Vinagre de caña is the secret to Al pastor. Traditionally this is not made with ancho/guajillo combo. Slices should have been 1/4" or less.
Aaah the magic hot plate. Love that thing. The Riga Sprats interested me so I looked them up for my local area. I was wondering if Bradley ran into some crunchy tails or bodies? That seems to be a complaint I saw on some reviews. King Oscar Sardines in Olive Oil are mighty fine and my often goto. I have cooked quite a few of Bradley's recipes with great success and rave reviews. Never boring Bradley. Thanks again for another cook to do.

Would you try with a rotisserie
Brad loved how you built the charcoal basket. But that got me thinking. Instead of you spinning it. Use a rotisserie or like an old record player to spin it.
A good trick is to put a piece of pork belly at the top so it’s drips down on the meat and keeps it from going dry
These sprats are good with shaved onions and dill on a rye toast with a thin later of mayo.

Pastor the taco with most moving parts. Hence I never get them without a positive review from someone I know. I think Chuds version is worth trying 👍👍
I have an idea…why does it have to be vertical? Why couldn’t you fashion up a rotisserie(with motor) and do it horizontal?
Going to try this but I’m going to use my Chud chimney charcoal starter and just keep adding coals
Maybe just take it out and shave some throughout the cook 😉
