Taiwanese braised pork belly rice aka lu rou fan is one of my all time favorite comfort meals! Here’s how to make it at home easily! A spoon of sauce with rice and it brings you straight to food heaven 🥘
Ingredient List:
Pork Belly: 1 lb
Garlic: 4-5 cloves, minced
Shallots: 4-5, finely chopped (can substitute with onions if needed)
Ginger: 2-3 slices
Shiitake mushrooms: 8-10 pieces, soaked
Light Soy Sauce: 3 tbsp (adjust to taste)
Dark Soy Sauce: 2 tbsp
Rock Sugar: 2 tbsp (or substitute with brown sugar)
Five-Spice Powder: 1/2 tsp
White pepper: 1/2 tsp
Star Anise: 1-2 pieces
Bay Leaf: 1-2
Dried Chili Pepper: 1
Water: 1-2 cups (enough to cover the pork)
Hard-Boiled Eggs: Optional, for serving (peeled)
Green Onions: Optional, chopped for garnish
1. Soak dried shiitake mushrooms in warm water until soft (30 minutes – overnight)
2. Slice pork belly into 2 inch long strips
3. Cut shiitake mushrooms into slices and dice shallots/onions.
4. Heat oil in a pan and stir fry pork belly until lightly browned (about 4 minutes).
5. Add sliced garlic, shallots, garlic and shiitake mushrooms. Sauté until fragrant.
6.Mix in soy sauce, dark soy sauce, rock sugar, five-spice powder, white pepper, bay leaf and star anise.
7. Add enough water to cover the pork and simmer on low heat for 1 hour until the pork are tender and the sauce thickens.
8. Serve over cooked white rice
