They’re perfect for any gathering, but especially during the holiday season when tamales bring everyone together 😋 This recipe makes about 36 tamales, so there’s plenty to enjoy and share!
TAMALES DE PUERCO INGREDIENTS:
For the pork picadillo:
► 6 lb. pork shoulder butt with bone
► 12 cups boiling water
► 1 whole onion
► 2 garlic heads
► Salt and pepper to taste
► 3 minced garlic cloves
► 1/2 white onion
► 2 jalapeños
► 6 roma tomatoes
► 2 1/2 tbsp chicken bouillon
For the sauce:
► 20 chile guajillo
► 2 chile ancho
► 3 cups of broth (from where we cooked the meat)
► 7 garlic cloves
For the masa:
► 1 1/2 cups lard
► 2 tsp salt
► 5 tsp baking powder
► 6 cups masa (I’m using Maseca for Tamales)
► 7 cups of broth (from where we cooked the meat)
► 1 cup of warm water
► Some corn husks
