Tamales Season Starts with These Green Chicken TAMALES VERDES DE POLLO!

And we’re kicking it off with my Green Chicken Tamales — tender shredded chicken simmered in a rich salsa verde, all wrapped in soft, fluffy, moist masa. Nothing says the holidays like the smell of tamales steaming in the kitchen 💚 so I hope you save this recipe and give it a try.

Ingredients:
For our chicken:
5-6 lbs half breasts with ribs or thighs( 📌just make sure you use bone, it will help your chicken not to be sooooo dry, over cooked chicken is not enjoyable 😁)
1/2 onion
Garlic head cut in half
3 bay leaves
Salt
Green salsa:
2 lbs (18-20 tomatillos)
5-10 chile serrano or jalapeños
5-6 Anaheim/ hatch chiles( roasted optional)
1/2 white onion
4 garlic cloves
1/2 bunch of cilantro
1/2 tsp cumin seeds
1/2 tsp peppercorn
1/2 tsp oregano
3 whole cloves
chicken bouillon to taste
Masa:
6 cups Maseca for tamal
1 1/2 (12 oz) cup lard
5 tsp baking powder
7 cup chicken broth/ water
1 1/2 tsp salt
1 tsp chicken bouillon
1 serving of love 💕

  1. I’ve made your red beef tamales and they were delicious. I want to try this one too. I’m slower at making them than Claudia, but I’m getting more experience now lol. It’s a “process” for me, I cook my roast or meat one day, then make masa next day, then assemble them & steam them. It takes me about a week lol.

  2. ❤❤❤it’s that time of year but for this Mexican all year no worries it’s actually tamales season all year long for me 😊 can’t wait I traditionally make mine for the holidays my family style, but I like to try the recipes throughout the year. This is meant to save and try. ❤❤❤
